One cause is some A/Cs have a much colder output.
... When first started, an A/C system will dry the air in a sealed area by condensing the moisture on the evaporator core and letting I drip out the drain. But later when the area / evaporator is already cold if a fresh amount of moisture is introduced the A/C will freeze more readily.
... If the fresh air intake is open, or doors or windows get opened more warm moisture is available for freezing.
My old '66 Rambler would blow snow out the vents on a 110 degree day. 
EDIT... Slower flowing air may help cause freeze-up.
