I have a 2001 automatic with option to turn the OD off.  DH wants OD off all the time when I drive to work in moderate city traffic.  Says better for engine.  I'm concerned about gas mileage.  DH likes jackrabbit starts, I drive like an old person with slow acceleration.

For me - should I have the OD off or on when I drive to work - any thoughts on this?

... Though DH is correct the transmission is designed to pop out of OD before the engine gets overloaded. I pop mine out of OD for down-hill engine braking. Driving easy helps to keep the torque converter locked up for less RPM/mile and better fuel mileage. You paid extra for an automatic so let it be automatic...
