i recently put on 285/65/18 nitto terra grapplers on my frontier (in exchange for the stock ones). Now, i know nissan says to run their stock tires at 35 PSI, which i did, but i checked online at what i should run my terra grapplers at and their website said 80 (EIGHTY!) PSI. Does that sound right to anybody? I just figured that there's no way i should be running more than double the pressure for tires that are not THAT much bigger. Any input would be greatly appreciated.

God I hate people who do that. NO DO NOT RUN IT AT 80psi.

Nissan put up that pressure for a reason.  That's what all your tow ratings and everything stem from, including speedo.  Only a full size truck that calls for it would require 80.

The tire even says MAX inflation, not RUN AT THIS PRESSURE!  Of course because of our society, people see that 80 and go "Oh, I can run these at 80 psi"  That natural pushing things to the limit

BUT... do keep an close eye on the tread.  Look for signs of uneven wear.  More wear to the inside or outside of edges of the tire will call for an adjustment in pressure.

I had a similiar problem on my Bronco when I added 35's to it.  The max was 35 and the Bronco called for 35 and 41.  I took some of my kids driveway chalk which is thick and colored the tread part of the tire and drove slowly in a straight line up my driveway.  I adjusted the pressure accordingly for street driving.  Now I run them at 30psi in the front and 22 in the back and I have awesome treadwear.  I have about 15,000 on my tires now.  Try that and see how it works.
